Hopefully not another false start
Ok, I finally got sick of Darren saying "You need to start a blog". And after all I was the one that introduced Darren to blogging. Geesh!!!
This first post is to put out a request for assistance on naming my blog. I kind of like "Life among these Jackson Hole Estates" or possibly "Longview" since I will be posting photographs (if I ever buy a camera).
So I can have something interesting to post tonight, here is what I did for dinner.
I must say, when I put my mind to it I am a pretty good cook. Plus I remember it is kind of fun. I wish my kitchen was a little bigger though. I just cooked a meal big enough for 5 people. And I had lots of fun doing it. Of course I was the only one around to eat it. So I put 4 servings into some tupperware and I will take it to work tomorrow and see if any of my coworkers want some. Then I ate what was left for dinner tonight.
So here is what I did. I sauteed some tofu (garlic flavor) and onions with some olive oil. If I had more time I would have cooked them longer until the tofu was probably half its original size or smaller. I prefer the texture of tofu that has been cooked down more. It becomes more like a meat instead of the mushy stuff it starts off as. That took a while to cook down. Then I poured in a mixture of coconut milk and organic chicken broth that had about 2 tablespoons of curry mixed in. I also tried to mix in some flour to help thicken it but it was pretty lumpy so I skimmed it off the top. Once the tofu, onions and liquid was brought back up to temperature I threw in my mix of vegetables. Broccoli, Cauliflower, Carrots, Red Peppers, Green Peppers, and at the end I threw in some snow pea pods (I think I am leaving something out). I cooked that for about 15-20 minutes at a simmer, stirring the entire time. I was overflowing my only skillet so I couldn't really cover it. Plus I was worried I might burn the coconut milk. After the vegetables were starting to get soft I served it over medium grain rice that I had steamed ahead of time.
Man was it good.

Thanks Pinholeman. By the way, I don't want you to think I have abandoned your blog. I have been reading it but just haven't been posting comments as often now that I am a little busier with a 40/hr/week job and such.
